I am thinking about all the possibilities that CouchCMS could be used for...

Could I possibly use it to make an intra-network for a small business? Giving them a forum(just a bunch of comments?) or building a small social network (related users?).

I know you can add anything to CouchCMS since its just PHP in the end... but could this be done using a function that's part of CouchCMS already?

What are some of the more "complex" things that people have done with CouchCMS? Just to get ideas...

Couch has nearly all the components to build such sites (e.g. relations, fronend-submissions etc.) - the long missing piece has been a proper user registration module.

The good news is that this module is right on its way.
With that in place, some very exciting possibilities will open up where Couch can be used.

Goooot ya. That would be amazing! Then I could just stick to this CMS and be able to do at least what 50% of developers can do (at least for my clients). And the more that I can personally do, the more that I am personally worth! Woot.
